-About Komura's Pottery-
Komura's pottery, which does not use glaze, reveals the natural expression of the clay itself, making food look particularly appealing. This type of unglazed pottery is called "arayachi" (unglazed ware) and is also known as "nanban." Generally, it is referred to as "yakishime" (high-fired unglazed ware).
The characteristics of Nanban ware are, first, its heat retention properties. Hot liquids stay warm for a long time, and cold liquids remain cool. Another feature is the microscopic pores on the surface of the pottery. These pores allow the components of the clay and the ingredients of the food to blend, mellowing the taste and enhancing preservation and maturation. There is a reason why it has been used since ancient times for sake jars, soy sauce, and miso jars. Even today, arayachi sake jars are always used for aging awamori.

-Anagama Kiln-
Komura's kiln is an ancient anagama (tunnel kiln). In an anagama kiln, the firing chamber where the works are fired and the combustion chamber where the fuel (firewood) is burned are integrated. The appearance of the works changes depending on their position (at the front or back of the fire) and the embers, resulting in unique and individual styles. While the price varies depending on the firing marks, the clay used is always the same.

-Clay and Firewood-
The pottery is made by blending clays from the southern part of Okinawa main island, known as ja-garu, ma-ji, kucha, and ni-bi.
For fuel, Komura is particular about using mostly Ryukyu pine. The firing process with Ryukyu pine takes about six days.

-Care for Arayachi-
Yakishime pottery can absorb food odors. If an odor develops, first soak the pottery in water overnight.
This method usually resolves the issue. If one soak isn't enough, boiling can be effective. Repeat until the odor is no longer noticeable.
When washing, especially at first, the particles are coarse, so we recommend using a scrubbing brush.
Regular dish soap is fine for cleaning. Since pottery is more fragile than porcelain, it's best to avoid soaking it.
After washing, wipe off moisture and allow the pottery to dry completely before storing it to ensure its longevity.
Storing pottery that has absorbed water can lead to mold, stains, or cracks.
A final rinse with hot water can help it dry faster and prevent odors and mold.
Rather than hesitating to use the pottery due to concerns about care, please use it frequently.
With each use, the surface will become smoother, and the character of the pottery will evolve.

The items are carefully processed after firing, so please use them with confidence. Some products have been repaired and reinforced. Please be aware of this as well. If a regular dish sponge tends to fray, please use a scrubbing brush.
